Classic Lamb Burgers

Heat olive oil in small skillet over medium heat, cook yellow onion until softened and just beginning to brown, about 5 minutes. Add garlic and cook for another 30 seconds. Remove from heat and let cool.

In large bowl combine ground lamb, onion mixture, salt and pepper, gently mix to combine. Divide lamb mixture into 6 equal portions and form into patties.

On a gas grill, turn all burners to high, close lid and heat until hot, about 15 minutes. Scrape grates clean and brush with oil. Grill lamb burgers over medium-high heat 7 to 9 minutes total, turning halfway through cooking. Remove from grill and loosely cover with foil.

Spread 1 tablespoon mustard on each bun and top with lamb patty and vegetables. Serve.
